Martha's Best Lasagna


1 med. onion, chopped
1/8 tsp. garlic powder
1 tblsp veg. oil
2 lb. ground beef
salt and pepper
1 Tblsp. parsley flakes
2 - 3 tsp. basil leaves
2 cans ( 15 oz. ) tomato sauce
1 can ( 6 oz. ) tomato paste
10 oz. lasagna noodles
2 ( 12 oz. cartons ) cottage cheese
2 eggs
1 cup grated Parmesan cheese
3 pkg. ( 8 oz. ) Mozzarella cheese

In heavy pot, or dutch oven, lightly brown onion, sprinkled with garlic powder in oil. Add beef, brown. Add salt and pepper ( to taste ) and next four ingredients. Bring to a boil and simmer uncovered 30 - 40 minutes. Add 1 Tblsp. salt to 4 qts. water. While water boils rapidly, gradually add lasagna so that water continues to boil. Cook uncovered, stirring occasionally, 12 to 15 minutes. Drain. Mix together cottage cheese, eggs, 1/2 tsp. salt, 1/4 tsp. pepper and 1/2 cup Parmesan cheese. Arrange half the lasagna noodles in a greased 13 x 9 x 2 inch baking dish. Top with half the Mozzarella slices and half the cottage cheese mixture. Cover with meat sauce. Repeat. Bake at 375 degrees until hot and bubbly. Serves 10.
