Chicken Irene

1 chicken breast for each person
swiss cheese ( 1 slice per chicken breast )
prosciutto ham ( 1 slice per chicken breast )
spicy mustard
1 or 2 eggs, beaten
bread crumbs

Pound chicken breasts as flat as possible. Spread each chicken breast with mustard. Place a slice of ham and swiss cheese on each chicken breast. Roll and secure each breast with a toothpick. Dip each rolled chicken breast in egg, then in bread crumbs. Deep fry until done ( approx. 6 - 8 minutes each ).
