Chicken Loaf with Mushroom Sauce


1 ( 4 lb. ) chicken, cooked and diced
2 cups cooked rice
1 cup fresh bread crumbs
1 1/2 Tblsp. salt
1/4 cup chopped pimento
3 cups milk or chicken broth or half milk and half broth
4 eggs, well beaten

Mix all ingredients together, adding eggs last. Bake 1 hour in 325 degree oven in 13 x 9 baking dish. Serve with mushroom sauce.

Mushroom Sauce

1/2 stick butter
1/4 lb. fresh mushrooms or 2 cans sliced mushrooms
1/4 cup flour
1 can chicken broth
1/4 cup cream
1/8 tsp. paprika
1/2 Tblsp. chopped parsley
1/2 tsp. lemon juice
salt to taste

Melt butter in saucepan and add mushrooms. Cook genly for 5 minutes; stirring occasionally. Add flour and mix well; then add chicken broth. Cook stirring constantly until thick and smooth. Add cream, paprika, parsley, lemon juice and salt. Mix and let stand over hot water until ready to serve. Chicken loaf and sauce serves 12
