Fresh Tomato and Ribbon Side dish
1/2 of a ( 12 ounce ) pkg. egg noodles, uncooked
3 Tbsp. olive oil
1/2 cup sliced green onions
1/4 cup chopped fresh parsley
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. thyme leaves
1 med. tomato, peeled, seeded and chopped
Prepare egg noodles according to directions; drain. In medium skillet combine olive oil, green onions, parsley, garlic, salt and thyme. Cook until green onions are tender. Add tomato; heat through. Add hot noodles, toss to mix. Serve immediately. 4 to 6 servings.
