Zucchini and Tomatos Au Gratin


3 Tbsp. chopped onion
2 Tbsp. olive oil
2 lbs. zucchini, cut into 1/4 inch pieces
2 cans stewed tomatos
salt
1/4 tsp. pepper
1 can sliced mushrooms
3/4 cup sharp cheese
Herb bread crumbs

Cook onion in olive oil; add zucchini. Cook slowly for 5 minutes, stirring frequentely. Add tomotos, salt, pepper, mushrooms and some of the cheese. Turn inot a greased baking dish. Sprinkle remaining cheese and crumbs over top. Bake at 375 degrees about 10 minutes.
