Sweet Potato Pie

Sweet Potato Pie
(Used by many women in the Parksley Area for years)
Mix in order given:
1 1/2 c. cooked mashed sweet potatoes
1 c. sugar
2 egg yolks
pinch salt
1 tbsp. flour
1 lump melted butter
1 tsp. vanilla
1 tsp. lemon extract
2 c. milk
1 large can evaporated milk (undiluted0
2 egg whites beaten stiff
Strain and pour into unbaked pie shells.
Bake at 400 degrees until
firm, about 35-40 minutes.
Makes 2 9-inch pies.
