Eastern Shore....Sweet Potatoe Biscuits

Eastern Shore....Sweet Potatoe Biscuits are not made with

yeast!  Here is a recipe that is from the Eastern Shore:



2 c. flour

1/2 c. shortening

1 c. sweet potatoes, mashed

1/2 c. sugar

1/2 tsp. salt

2 Tbsp. baking powder



Sift flour, sugar, salt and baking poder together, then add shortening and

sweet potatoes.  Roll out on a floured board and cut with lip of glass or

biscuit cutter.  Bake at 400 to 425 degrees until golden brown.
